Summer is not slowing down and neither is the popsicle consumption around the Lavender Blue Cottage. It’s just so darn hot! We’ve got to cool off somehow, so it may as well be with a delicious, creamy, healthy, made-from-natural-sugar fudge pop.
This recipe also contains a secret ingredient which gives this layered mint fudge pop recipe incredible flavor. These babies are so good!

Ingredients and Equipment for this Chocolate Mint Layered Fudge Pop Recipe
Before you begin making these mint chocolate fudge popsicles you’ll want to make sure you have this equipment:
- A blender or mixing bowl and whisk
- Popsicle sticks
- A silicone popsicle mold or a hard plastic popsicle mold (I prefer the hard mold for layered popsicles like these)

You’ll also need the following ingredients:
- 2 cups yogurt – plain not greek (try my favorite pressure cooker homemade yogurt)
- 1/2 cup coconut cream (Azure Standard has the best coconut cream!)
- 1/3 cup pure maple syrup (plus a little extra if desired)
- 1 tsp pure vanilla extract or pressure cooker pure vanilla extract
- 1 tsp pure mint extract
- 1/2 tsp green spirulina powder or green food dye (more if you want a darker green color)
- 1/8 cup cocoa powder

Step-by-Step Instructions
- In a mixing bowl (or preferably a blender) blend until smooth the yogurt, coconut cream, syrup, vanilla and mint extracts, and spirulina powder. Do NOT add the cocoa powder yet.
- Pour this green mixture into your popsicle molds, filling only about half way. Store remaining yogurt mixture in the fridge.
- Add the popsicle sticks and freeze until solid (at least 1-2 hours).
- To the rest of the liquid mixture, add your cocoa powder (plus more sweetener if desired) and mix until smooth.
- Fill the molds with the chocolate mixture until full. Freeze again until solid.


Chocolate Mint Layered Fudge Popsicles
Equipment

Notes
- If you do not like dark bitter chocolate flavor, I recommend adding about 1 tablespoon more of the syrup (or sweetener of choice) to the chocolate layer. Once I did this, my kids finally liked the chocolate layer.
- You can certainly use green food coloring or omit the coloring entirely. It will taste the same but the color makes it super cute! I try to avoid food coloring so this green spirulina powder gives it the perfect light minty green color. Don’t add too much or it may overpower the taste. At 1/2 teaspoon we can’t taste it at all.
- Instead of coconut cream, you can add milk or whipping cream for a very thick and creamy taste. I have found the coconut cream to add the best texture and taste, so that is what I prefer. Azure brand is my favorite, but any brand will work.
- For a fun variation, you could add chocolate chunks to the liquid mixture. You could also only do the green layer and dip the popsicle in melted chocolate and let it harden in the freezer on a sheet pan. I find that difficult to eat, a bit messy – but super tasty!

Storing Your Chocolate Mint Layered Fudge Pops
Store your delicious chocolate mint layered fudge pops in the freezer in an air-tight container or freezer bag. The pops can be left in the mold for storing or taken out.
If you remove the fudge pops from the mold, I recommend wrapping them with something non-stick like parchment paper or plastic wrap. Alternately, you could just place a layer of parchment paper between each fudge pop to keep them from sticking.

Ideas for Customizing Your Chocolate Mint Layered Fudge Pops
- If you do not like dark bitter chocolate, I recommend adding about 1 tablespoon more of the pure maple syrup (or a sweetener of your choice) to the chocolate layer. Once I did this, my kids finally liked the chocolate layer.
- You can certainly use green food coloring or omit the coloring entirely. It will taste the same but the color makes it super cute! How do I Make my Chocolate Mint Layered Fudge Pops Creamy and Not Icy?
My best tip for getting delicious, creamy textured chocolate mint popsicles is to use full fat yogurt. Low fat yogurt will result in more icy texture, but it will still taste great either way! I like to make my homemade yogurt from full fat raw milk – and this makes it extra yummy!

Tips for Making Chocolate Mint Fudge Popsicles
Here are a few helpful tips for making the best chocolate mint fudge pops:
- Once you’ve poured the liquid yogurt mixture into your popsicle mold, gently tap the mold to get any air bubbles out before freezing.
- You may need to run your frozen popsicle mold under warm water for a minute to loosen the fudge pops before taking them out.
- If you want to make a stash of popsicles, remove finished pops from the mold and wrap individually so you can use the mold for a second batch.

Would you please be more specific about how much green mix to add to the molds the first time. Molds come in so many different sizes. Is it about half of the green mix? Thanks
Cami, can you taste the coconut in these pops? They look fun and delicious.
I cannot. I’ve tried using milk or whipping cream and they tend to leave a film in your mouth. Which is why I prefer the coconut milk. Hope that helps!
