Layered Trifle Recipe Made with Freshly Milled Flour

A delicious, healthy trifle recipe made with freshly milled flour, fresh fruit and homemade whipped cream. This dessert is heaven-in-a-bowl and it’s calling your name!

My dear husband has a December birthday and every birthday, without fail, he asks me to make the same thing. This trifle recipe filled with layers of fresh fruit, creamy whipped cream, and the most delicious cake. (I don’t mind 😉 )

In fact, the tradition is so strong that it’s gotten to the point where we all associate this trifle cake with the Christmas season, due to the timing of his birthday. And why not – the red and green fruits make it look very festive!

What I make now is an adaptation of a recipe from the Taste of Home magazine that I made in our early years of marriage. The original recipe used packaged instant pudding, sweetened and condensed milk, cool whip, white flour and lots of sugar! Yummy, but I just don’t think you need to make it so unhealthy.

I can assure you this trifle is plenty sweet with only pure maple syrup and fruit. The combo of cake texture, creamy whipping cream, and fruit make it the most delicious dessert!

What Makes this Trifle Recipe a Winner

Here is why I make this recipe on repeat, year after year, and probably always will:

  • The cake layers are made from scratch using freshly milled whole wheat flour for tons of extra nutrition. (Seriously, this is healthy enough to be breakfast!)
  • Whole wheat, freshly milled flour adds a depth of flavor that cannot be beat.
  • We’re not using any processed sugar, but we won’t be compromising on flavor either. You’re going to be amazed at good this trifle recipe tastes being sweetened with pure maple syrup and naturally fresh fruit!
  • It’s totally customizable in both flavor and appearance. Change up your kiwi for blueberries and you’ve got a 4th of July trifle, all red fruit = Valentine’s Day trifle, and so on.
  • This impressive dessert is perfect for dinner parties, potlucks, sharing or not sharing.

Trifle Recipe Supplies and Ingredients

Supplies

To make this trifle recipe, you’ll want either one large bowl/dish or several smaller individual dishes or wine glasses. Because this cake has gorgeous layers, I love using this glass bowl with straight sides that really shows it off. (I use this bowl for potlucks, sour dough starter, everything – it’s my favorite! And it has a lid!)

Ingredients

Vanilla Cake

  • 2 1/2 cups (260 grams) freshly milled flour (I recommend using soft white wheat berries, ground on the finest milling setting.)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 eggs
  • 1 1/2 cups plain Greek yogurt
  • 1/3 cup avocado oil or melted coconut oil (cooled)
  • 3/4 cup pure maple syrup
  • 2 teaspoons vanilla extract or vanilla paste

Whipped Cream

  • 1/2 gallon or 2 liters of heavy whipping cream
  • 1/2 cup of pure maple syrup

Fruit

  • 5-6 kiwi, chopped small
  • 2-3 cups chopped fresh strawberries
  • 1 cup raspberries

How Make this Trifle Dessert Recipe

Making the Cake

  • Preheat the oven to 350 degrees fahrenheit, and prepare a baking sheet or baking dish by spraying with cooking spray or covering with parchment paper.
  • In a medium sized bowl, mix together your dry ingredients, including the flour, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, mix together your wet ingredients, including the eggs, yogurt, oil, syrup, and vanilla.
  • Combine the wet and dry ingredients and mix together until just incorporated.

  • Pour the cake batter onto the prepared baking sheet and bake for about 15-20 minutes. The timing will depend on the size of your pan. Watch it carefully and remove from the oven when the center springs back when touched. Let it cool completely.

Making the Whipped Cream

In a high-powered blender or mixer, mix the whipping cream until it has turned solid and will form stiff peaks. Be careful to not mix it too much. Once it is thick enough for whipping cream, add in the syrup and mix a little bit longer to incorporate the sweetener. You could also use powdered sugar if this is not sweet enough for you.

Making the Layered Trifle

  • If your fruit is not already chopped, prepare that now.
  • Crumble the cake by lifting it from the pan and breaking it apart with your fingers. Set aside.
  • Begin making the trifle by spreading an even layer of the homemade whipped cream at the bottom of the trifle bowl. Next, add a layer of the cake, followed by a mixture of the fruit. I like to layer the fruit mostly on the edge of the trifle dish, rather than all in the center. This way you get a beautiful view of the fruit from the sides.
  • Continue layering your trifle with more cream, cake, and then fruit. Finish off the top with either a dollop of cream in the top center and additional berries all around or crumble more cake right in the center. You really can’t go wrong with this cake, so just enjoy being creative and garnish the top of the trifle however you want for a one-of-a-kind look.

Storing Your Trifle

In my house we never have leftovers of this delicious trifle, but if you do, store the leftovers covered in the refrigerator for up to a couple of days.
