Make wholesome homemade cornbread with freshly milled soft white wheat, optional freshly milled cornmeal, and honey. An easy, old-fashioned recipe!

Ingredients

Wet Ingredients

  • 3/4 cup milk
  • 1/4 cup honey
  • 1 egg
  • 1/4 cup melted butter

Dry Ingredients

  • 1 cup 130 grams cornmeal (optional fresh milled cornmeal)
  • 1 cup 130 grams freshly milled flour
  • 1 teaspoon salt
  • 2 1/2 teaspoons baking powder

Instructions

  • Preheat the oven to 425 degrees fahrenheit, and prepare an 8 x 8 dish pan or a 10 inch skillet (or another preferred size) by greasing the bottoms and sides thoroughly.
  • In a mixer or bowl, whisk together the wet ingredients until smooth.
  • Top the wet ingredients with all of the dry ingredients, and mix until just combined. Try not to overmix. The batter should be a wet batter, similar to a cake mix.
  • Pour the batter into the prepared pan and bake in the preheated oven for 15-20 minutes. It is finished when the tops begin to brown and when a toothpick inserted comes out clean.
  • Lather with butter and honey (or honey butter), and enjoy every bite!

Notes

Choose your pan wisely. The thickness of your cornbread will depend on the size of your baking dish or skillet. A smaller pan will produce thicker cornbread, while a larger pan will make it thinner. Adjust your baking time accordingly.
Use soft white wheat. I recommend freshly milled soft white wheat for a tender texture. Hard white wheat can also be used, but it may produce a slightly heartier result.
Check your grain mill instructions. Always follow your manufacturer's recommendations before milling corn. Not every mill can safely handle every variety of corn.
Adjust the milk as needed. Freshly milled cornmeal can absorb liquid differently than store-bought cornmeal. Don't hesitate to add a little extra milk if your batter seems too thick.
Avoid overmixing. Stir the batter just until the ingredients are combined. Overmixing can make your cornbread less tender.
Enjoy it fresh! Like most homemade cornbread, this recipe is especially delicious served warm from the oven with a little melted butter.
