Boy, have I got a treat for you! This pomegranate salsa started out as a treat for me, but it was so delicious that I decided it needed to be shared.

But just a warning to you, my friend – if you bring a bowl of this deliciousness to a party, you will be asked for the recipe. You might want to be prepared with a few copies to hand out.

Why, might you ask? Because this salsa, made with fresh, flavorful ingredients is just too good! It’s also healthy, unique, gluten free, beautiful and impressive. With its red and green colors, this is the perfect Christmas salsa to serve at your next holiday party.

Trust me, you’re going to want to use this salsa on more than just tortilla chips. You might even eat it with a spoon. There’s no shame in that! I might even join you. 😉

Fresh Pomegranate Salsa Ingredients

  • 2 cups pomegranate seeds (also known as pomegranate arils)
  • 1 medium size cucumber, diced
  • 1 small red onion, chopped in small pieces
  • 1 jalapeno pepper, seeds removed and chopped
  • 1/2 cup fresh cilantro, chopped
  • 2 limes zested and juiced (This is your secret sauce. Pomegranate and lime are a match made in salsa heaven!)
  • salt to taste

How to Make Fresh Pomegranate Salsa

This fresh salsa is quick and easy to make.

  1. Gather all of your delicious produce.
  2. Finely dice the cucumber, jalapeno pepper, red onion and cilantro.
  3. Zest the limes and squeeze the fresh lime juice into a separate bowl.
  4. Cut and de-seed the pomegranates. If you’ve never cut a whole pomegranate before, take a look at Better Homes and Gardens article how to cut and open a pomegranate without making a mess in your kitchen for tips that make this process easy.

  1. In a bowl, mix together the pomegranate arils, diced cucumber, red onion, jalapeno, cilantro, salt, lime zest and half of the lime juice from both limes.
  2. Gently stir and toss all the ingredients together until well combined.
  3. Taste test to determine if you would like more salt or the remaining lime juice. (I ended up using all of the lime juice.)
  4. Dig in and enjoy!

Ingredients

Serving Suggestions

My favorite way to eat this pomegranate salsa is with good ol’ tortilla chips, but that’s not all you can do with it. Use this anywhere you would use a regular salsa, dip or pico topping. For example,

  • Stir this salsa into softened cream cheese to make a pomegranate dip. Serve with crackers and chips.
  • Sprinkle your salsa on tacos, enchiladas, nachos or other savory dishes.
  • Serve over any meat, like sea food, salmon, chicken, pork or beef. It’ll taste amazing!
  • Mix with some extra virgin olive oil and use this as a chunky salad dressing.
