Fresh Pomegranate Salsa

This fresh pomegranate salsa will knock your socks off! Full of fresh produce, this combination of flavors cannot be beat. Try it with chips, crackers or served over meat. Yum!
- 2 cups pomegranate seeds (also known as pomegranate arils)
- 1 medium size cucumber, diced
- 1 small red onion, chopped in small pieces
- 1 jalapeno pepper, seeds removed and chopped
- 1/2 cup fresh cilantro, chopped
- 2 limes, zested and juiced
- salt to taste
Gather all of your delicious produce.
Finely dice the cucumber, jalapeno pepper, red onion and cilantro.
Zest the limes and squeeze the fresh lime juice into a separate bowl.
Cut and de-seed the pomegranates.
In a bowl, mix together the pomegranate arils, diced cucumber, red onion, jalapeno, cilantro, salt, lime zest and half of the lime juice from both limes.
Gently stir and toss all the ingredients together until well combined.
Taste test to determine if you would like more salt or the remaining lime juice. (I ended up using all of the lime juice.)
