Fresh Milled Whole Wheat Flour Waffles

Ingredients

Wet Ingredients

  • 1 cup milk
  • 2 tablespoons pure maple syrup
  • 2 eggs
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups (240 grams) freshly milled flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon (optional)

Instructions

  • Preheat a waffle iron/press so it is very hot before pouring in the waffle batter.
  • In a large mixing bowl, whisk together all the wet ingredients until smooth.
  • To the same bowl with the combined wet ingredients, add all the dry ingredients including the flour, salt, baking powder, and baking soda (and cinnamon if using). Stir together just until combined, being careful not to overmix the batter.
  • Scoop the batter into the waffle iron, and close the iron. Cook for approximately 3-4 minutes, or as suggested in the appliance instructions.
  • Serve warm with your favorite toppings, which could include maple syrup, honey, peanut butter, fresh fruit, butter or cream.
