Fresh Milled Whole Wheat Flour Waffles Recipe

A whole wheat flour waffles recipe has no business tasting this good, yet it does! Taste the difference that freshly milled flour makes.

My whole family loves waking up to a breakfast of homemade waffles. There’s something about that stack of golden brown waffles with crisp edges and a fluffy texture that’s impossible to resist. (Honestly, I don’t try very hard to resist.)

For us, the waffle non-negotiables are these:

#1- There must be tasty mix-ins and/or toppings, of course.

#2- The waffles must be made using this freshly milled flour recipe. No other waffle recipes that we’ve tried compare to this one. I’ve done lots of experimenting to get all the ingredients just right.

You might notice some similarities between this waffle recipe and my recipe for the greatest pancakes with fresh milled flour. That’s because, you can basically use the same recipe for each, you just need a higher amount of fat (butter, coconut oil or vegetable oil, etc.) in the waffle mix to create a crispy crust.

Nice, isn’t it? This is a 2-for-1 recipe that never fails to impress.

Tips for the Best Ever Waffle Recipe

I’ll let you in on my secrets for the most delicious homemade waffles.

First, is using fresh milled flour. lf you’ve never tried milling your own flour from wheat berries, check out how to mill your own flour and the health benefits. It makes a huge difference in both the flavor and the nutrition of your baked goods. Trust me on this one!

Second, is cutting down on the baking powder. Waffles made from scratch typically use baking powder as a leavener to create rise. I’ve found that the 3-4 teaspoons called for in more recipes isn’t necessary and tends to give a funny aftertaste.

Using just 1 teaspoon of baking powder lets the flavor of your waffles shine, while still giving nice rise. You may lose a tiny bit of air, but I can assure you that it won’t be noticed. You’ll be too distracted by the incredible flavor! (And no buttermilk needed.)

Supplies and Ingredients for Whole Wheat Flour Waffles Recipe

Supplies

  • Large bowl with whisk and ladle/measuring spoon
  • Waffle iron (this waffle iron is ours and we love it)

Ingredients

Wet Ingredients

  • 1 cup milk
  • 2 tablespoons pure maple syrup
  • 2 eggs
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups (240 grams) freshly milled flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon (optional)

How to Make this Whole Wheat Flour Waffles Recipe

Preheat a waffle iron/press so it is very hot before pouring in the waffle batter. 

In a large mixing bowl, whisk together all the wet ingredients until smooth.

To the same bowl with the combined wet ingredients, add all the dry ingredients including the flour, salt, baking powder, and baking soda (and cinnamon if using).  Stir together just until combined, being careful not to overmix the batter.

Scoop the batter into the waffle iron, and close the iron.  Cook for approximately 3-4 minutes, or as suggested in the appliance instructions.

Serve warm with your favorite toppings, which could include maple syrup, honey, peanut butter, fresh fruit, butter or cream.

Storing Leftover Waffles

Leftover cooked waffles can be wrapped in plastic wrap or stored in an airtight container in the fridge for a few days. For longer storage, place them in a freezer bag and keep frozen for up to a few weeks.

When you’re ready to enjoy, you can reheat your waffles in the microwave, oven, or toaster, depending on your texture preference. (Bonus: this recipe is perfect for breakfast meal prep!)
