Tortillas are one of the easiest things to make, yet few people seem to make them. I’m not sure why, but I am sure that a homemade tortilla is 10x better tasting than a store-bought tortilla. Add fresh milled flour into the equation and you’ve got a tortilla that’s good enough to be the star of any meal.
I want to show you how to use simple ingredients to make fabulous homemade whole wheat tortillas. These tortillas are healthy, easy to make and taste incredible!

The Secret to the Best Homemade Tortillas
If you know me, you’ll know that I’m a firm believer in the value of freshly milled flours. I mill all of my flour from my own wheat berries. It’s a quick and easy process that you can read about in how to mill your own flour and the health benefits.
In a nutshell, you get the best flavor and the most nutrients from your flours within the first hours and days after they are milled.
You have no way of knowing how long a bag of flour has been sitting on your grocery store shelf. That’s why I love milling my own flour for tortillas and everything else. You’ll get top quality every time you bake!
Supplies and Ingredients for Fresh Milled Flour Tortillas

Supplies
- a mixing bowl and spoon or an electric stand mixer with a dough hook attachment
- rolling pin or tortillas press
Ingredients
- 1 cup warm water
- ¼ cup oil
- 1 teaspoon salt
- 1 tablespoon lecithin (optional, but highly recommended)
- 2 ½ – 3 cups (320-390 grams) freshly milled flour
- ½ teaspoon baking powder
A note about wheat varieties to use for tortillas:
For your higher protein wheats, such as hard red or hard white, you’ll use less flour. Add about 2 cups (260 grams) and then slowly add another ½ cup (65 grams) until the dough is workable.
For the softer, higher moisture wheats, such as soft white and spelt, you’ll need closer to 3 cups (390 grams) of flour.
Subbing some flour for Khorasan flour is also a great option for tortillas.
How to Make Fresh Milled Flour Tortillas
In a medium sized bowl, add the water, oil, salt, and lecithin. Whisk until all ingredients are incorporated.

Add to the bowl about half of your flour, then add the baking soda. Mix together until a shaggy wet dough forms. Slowly begin to add the remaining flour until the dough comes together and forms a workable ball.
Knead for 1-2 minutes, keeping your hands oiled as needed. Place inside an oiled bowl, cover with a tea towel or reusable bowl cover, and let the dough rest at room temperature for 10 minutes.

Divide the tortilla dough into 8 equal pieces, and roll each piece into a small ball of dough. Cover and set aside while you prepare/preheat a pan, cast iron pan, or tortilla maker. You’ll want the surface of the pan to be hot before placing the dough inside.


With each of the dough balls, roll them out into a thin flat circle, about 7-8 inches in diameter. To prevent the dough from sticking to the table, keep your work surface sufficiently floured as you work with each tortilla. Alternatively, use a tortilla press or tortilla maker to make quicker work at tortilla making.
Working with one tortilla at a time, place the rolled out dough into the hot skillet, watching it carefully for burning. Cook each side for about 1-2 minutes, or until browning and a few bubbles begin to occur. Stack all cooked tortillas on a plate and cover to keep them warm and moist.

Notes

Fresh Milled Flour Tortilla Serving Suggestions
Enjoy fresh and warm tortillas immediately in your favorite burritos, taquitos, quesadillas or enchiladas.
Soft flour tortillas will become more stiff as the cool. For soft, flexible tortillas, warm tortillas on both sides in a hot pan or wrap them in a damp paper towel and reheat them in the microwave for a few seconds.

Storing Homemade Tortillas
Fresh milled flour tortillas can be wrapped in plastic wrap and stored in the fridge for up to a few days. For longer storage, layer a piece of parchment paper between each tortilla. Wrap tortillas and place them in a freezer safe container and freeze for up to a few weeks.
Homemade Flour Tortilla Shells
If you want to turn some of those soft tortillas into crispy shells for tacos, that’s easy to do.
Preheat your oven to 425 degrees Fahrenheit. Warm your tortillas in a hot pan or in the microwave. Lightly spray or brush both sides of the tortillas with oil (butter, lard or shortening would work too). Drape the tortillas over the bars of your over rack and bake for 8-10 minutes until your shells are crispy. Enjoy!
