There is nothing quite like a fresh pancake in the morning, is there? Especially if it’s made with freshly milled whole grain flour. Kids love them, adults love them, and once you start experimenting with mix-ins and toppings, the flavor possibilities are endless!
In my world, the perfect pancakes have great texture, incredible flavor and lots of whole grain nutrition. I also love an easy recipe that comes together quickly.
This pancake recipe is all of those good things and more. It’s become my go-to recipe and a family favorite. Simply put, you gotta try these pancakes. They are too good to miss!

What is the Secret to the Best Homemade Pancakes?
I’ll let you in on my secrets for the most delicious homemade pancakes.
First, is using fresh milled flour. lf you’ve never tried milling your own flour from wheat berries, check out my how to mill your own flour and the health benefits. It makes a huge difference in both the flavor and the nutrition of your baked goods. Trust me on this one.
Second, is cutting down on the baking powder. Pancakes made from scratch typically use baking powder as a leavener to create fluffy pancakes. I’ve found that the 3-4 teaspoons called for in more recipes isn’t necessary and tends to give a funny aftertaste.
Using just 1 teaspoon of baking powder lets the flavor of your pancakes shine, while still giving nice rise. You may lose a tiny bit of air, but that just makes these pancakes more filling. 100% worth the trade off! (And no buttermilk needed.)

Supplies and Ingredients for the Greatest Pancake Recipe
Supplies
- A griddle, skillet or pan (I love using my cast iron pan!)
- Mixing bowl, whisk and spatula
Ingredients
Wet Ingredients
- 1 cup milk
- 2 tablespoons pure maple syrup
- 2 eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract

Dry Ingredients
- 2 cups (240 grams) freshly milled flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 1 teaspoon cinnamon (optional)

How to Make the Greatest Pancake Recipe
Preheat a griddle, skillet, or pan so it is very hot before pouring on the pancake batter.
In a large mixing bowl, whisk together all the wet ingredients until smooth.
To the same bowl with the combined wet ingredients, add all the dry ingredients including the flour, salt, baking powder, and baking soda. Stir together just until combined, being careful not to overmix the batter.

Using a ¼ cup measuring cup, scoop the batter onto the oiled and preheated griddle and cook for about 2-3 minutes, or until bubbles form on the surface and the edges begin setting. Flip the pancake and continue cooking for another 1-2 minutes, or until golden brown on both sides and cooked through. Adjust the heat as needed to prevent burning.
Serve warm with your favorite toppings, which could include maple syrup, honey, fresh fruit, butter or cream.
Storing Leftover Pancakes
Leftover cooked pancakes can be wrapped in plastic or stored in an airtight container in the fridge for a few days. For longer storage, place them in a freezer bag and keep frozen for up to a few weeks.
When you’re ready to enjoy, you can reheat your pancakes in the microwave, oven, or toaster, depending on your preference.
