Preheat a griddle, skillet, or pan so it is very hot before pouring on the pancake batter.
In a large mixing bowl, whisk together all the wet ingredients until smooth.
To the same bowl with the combined wet ingredients, add all the dry ingredients including the flour, salt, baking powder, and baking soda. Stir together just until combined, being careful not to overmix the batter.
Using a ¼ cup measuring cup, scoop the batter onto the preheated griddle and cook for about 2-3 minutes, or until bubbles form on the surface and the edges begin setting. Flip the pancake and continue cooking for another 1-2 minutes, or until golden brown on both sides and cooked through. Adjust the heat as needed to prevent burning.
Serve warm with your favorite toppings, which could include maple syrup, honey, fresh fruit, butter or cream.
