Melt in Your Mouth Fresh Milled Flour Biscuits

Fresh milled flour biscuits are raising the bar for all other biscuits. Delicious and healthy! This recipe is requested time after time by even the pickiest eaters.

After much experimentation, I’ve learned that all biscuit recipes are not created equally. Some are better than others and some are down right incredible!

I can tell you two things. First, this recipe is one of the incredible ones, and second, there is a secret to making biscuits that the whole family will love.

Whole wheat biscuits absolutely can be light, fluffy and melt-in-your-mouth good. You just need the right flour. Once you have that, it only takes a few basic ingredients to produce grandma-approved biscuits. Allow me to explain.

Why do We Use Freshly Milled Flour?

The secret to incredible biscuits (or pancakes, waffles or sandwich bread) is freshly milled flour.

I’m a firm believer in the value of freshly milled flours. I use an electric grain mill to mill all of my flour from my own wheat berries. It’s a quick and easy process that you can read about in how to mill your own flour and the health benefits.

In a nutshell, you get the best flavor and the most vitamins, minerals and nutrients from your flours within the first hours and days after they are milled.

You have no way of knowing how long a bag of flour has been sitting on your grocery store shelf. That’s why I love milling my own flour for biscuits and everything else. You get top quality and flavor every time you bake!

Ingredients for Fresh Milled Flour Biscuits

  • 2 ½ cups (290 grams) freshly milled flour
  • ½ teaspoon salt
  • 4 tablespoons (½ stick) cold butter
  • 3 teaspoons baking powder
  • 1 cup cold milk

How to Make Fresh Milled Flour Biscuits

Preheat the oven to 450 degrees Fahrenheit.

In a mixing bowl or food processor, mix the salt into the flour.  Cube the butter and incorporate the butter pieces into the flour mixture.  Mix it all together until the flour resembles coarse crumbs.  This works great in a food processor, with a pastry blender, forks, or hands.

Sprinkle the baking powder over the dough and pour in the milk.  Using a large spoon or spatula, mix the dough until it comes together and forms a ball.  If it is too tacky to work with, add a little more flour or simply flour your surface while folding the dough.  Knead/fold the dough 8-10 times, being careful not to overwork the dough.

Use a rolling pin to flatten the biscuit dough out onto a lightly floured surface, until it is about 1 inch thick.  Using a cookie cutter, biscuit cutter, or the rim of an upside down cup, press down in the dough while cutting out biscuit rounds.  Press the scraps together and do it again until you have used all the dough.

Place the biscuits on an ungreased baking sheet or cast iron skillet.  Bake for 10-12 minutes or until lightly browned and cooked through.

Fresh Milled Flour Biscuits

Light and fluffy melt-in-your-mouth biscuits just got even better with the addition of freshly milled flour. You've never had a biscuit this healthy and delicious!

Fresh Milled Flour Biscuit Serving Suggestions

Serve up your biscuits however you like. Simply spread butter on the tops of the biscuits or slice open and sandwich them with scrambled eggs and cheese for a savory biscuit.

If sweet biscuits are your preference, serving with butter and jam is always a hit. My favorite thing to do is to enjoy them warm with a slab of butter and drizzle of honey!  It tastes like home!

Storing Your Biscuits

Fresh milled flour biscuits can be stored after baking. Wrap them with plastic wrap or place them in an air-tight container. These biscuits can be stored at room temperature for a couple of days or in the fridge for several days.

For longer storage, place a piece of parchment paper between each biscuit and place in a freezer-safe container. Keep your biscuits in the freezer for up to several weeks.
